[22.52 Si ripete con il Cookie, solo un po' più scuro e rock!]

Ho ancora un po' di dulce de leche comprato in montagna quest'inverno. Io ADORO il Dulce de leche, lo metterei ovunque, anche sulla pasta!
La ricetta originale prevedeva il peanut butter, ma siccome io sono allergica alle noccioline mi sono detta.....Dulce del Leche...!!!!!
Sono venuti buoni, anche se continuo a preferire la versione semplice dei Chocolate Chips Cookies.

[22.52 American double chocolate chips cookies con dulche de Leche]    (For English version scroll down!)

Ingredienti:
100 gr burro
200 gr farina
1 uovo
80 gr zucchero di canna
1 bustina di vanillina
1/2 cucchiano scarso di lievito
10 gr cacao amaro
1 pizzico di sale
Chocolate chips
Dulce de leche

Preparazione:
Far cremare il burro con lo zucchero, poi aggiungere l'uovo.
In una ciotola a parte mescolare la farina, il lievito, il cacao, la vanillina e il sale.
Unire il composto di farina a quello di burro un po' alla volta.
Unire le chocolate chips.
Con il composto formare delle palline e mettere al centro di ogni pallina un cucchiaino di Dulce de leche e ricoprire.
Appiattire ciascuna pallina e mettere su una piastra coperta di carta forno.
Infornare per 10 minuti a 180°.






I still have some 'dulce de leche bought this winter. I LOVE Dulce de leche, I'd use it everywhere, even on the pasta!
The original recipe included the peanut butter, but since I'm allergic to peanuts I said ..... Dulce the Leche ...!!
They came good, although I still prefer the simple version of the Chocolate Chips Cookies.


[22.52 American double chocolate chip cookies with dulche de Leche]
ingredients:100 g butter
200 g flour
1 egg
80 g brown sugar
1 teaspoon of vanilla extract
1/2 teaspoon low yeast
10 g cocoa powder
1 pinch of salt
Chocolate chips
Dulce de leche

preparation:Cream the butter with the sugar, then add the egg.
In a separate bowl mix flour, baking powder, cocoa, vanilla and salt.
Combine the flour mixture to the butter a bit 'at a time.
Combine the chocolate chips.
Make the mixture into balls and place in center of each ball, one teaspoon of Dulce de leche and covered.
Flatten each ball and place on a plate covered with parchment paper.
Bake for 10 minutes at 180 °.

[04.52 ] Eppol Pai Taim aka Apple Pie Time

Ho nel cuore gli Stati uniti e nello specifico New York per una serie di motivi.
Ne sono innamorata da sempre ma quando ci sono andata 2 anni fa mi è entrata completamente nel cuore e mai più ne uscirà. Metti che di un NYese mi sono pure innamorata quest'estate...la fine!
ho provato e riprovato cercando ogni minima possibilità di trasferirmi negli States (leggi STEITS) ma niente da fare...problemi di visto e crisi economica sempre maggiore mi impediscono di realizzare il mio sogno...per ora!
E siccome devo pur ripiegare in qualche modo, come già vi avevo detto, vorrei andare a fare l'aiuto pasticciera (ma potrei pure fare la sguattera) a London City. Quindi sto sperimentando ogni tipo di dolce anglosassone in modo da essere più che pronta a cogliere al volo la mia chance...quando e se mai arriverà!
Essendo autunno e iniziando l'aria a farsi freddina...sento sotto al naso inevitabilmente profumo di mele e cannella...e così...

[04.52 Eppol Pai...la torta di mele all' Amerricans]   (For English scroll down!)

Ingredienti per la pasta:
50 ml circa di Acqua ghiacciata
150 gr burro
300 gr farina 00
1 pizzico di sale
30 gr zucchero
Ingredienti per la farcia:
1 cucchiaino di cannella
1 cucchiaino di farina
1 pizzico di sale
1 buccia di limone (+ il suo succo)
1 kg di mele granny Smith
100 gr di zucchero

Preparazione:
Mettere in una ciotola la farina, il pizzico di sale  e il burro e impastare. Aggiungere l'acqua ghiacciata e continuare ad impastare fino ad ottenere una palla omogenea non troppo friabile. Avvolgere l'impasto fatto a palla nella pellicola e farlo riposare in frigo per almeno 1 ora.
Intanto sbucciare e tagliare a fettine le mele e metterle in un recipiente insieme alla cannella, la buccia di limone, il succo lo zucchero, il sale e la farina setacciata. Mescolare tutto prestando attenzione a non rompere le mele.
Quando la pasta sarà pronta stenderne metà in uno stampo per crostate da 25 cm circa. Riempire con il composto di mele e usare l'altra metà dell'impasto per ricoprire il tutto. Fare dei buchini sulla parte superiore in modo che non si formi la condensa.
Con la pasta in eccesso potete fare delle decorazioni sulla torta. Infornare per 20 minuti a 200°, poi per altri 20 minuti a 180° e infine per altri 20 minuti a 170°.
Una volta cotta la torta spegnete il forno, spennellate un uovo sulla superficie e cospargete di zucchero. Lasciar raffreddare nel forno.
(In alternativa anche lo zucchero a velo va benissimo anzi forse meglio!)



American Apple Pie

Ingredients for the pie crust:
300 grams all-purpose flour

1 teaspoon salt
30 grams granulated white sugar
150 grams unsalted butter, chilled
50/60 ml ice water
Apple Filling:
1 kg apples Granny Smith, peeled, cored, and sliced 1/4 inch thick

50 grams granulated white sugar
55 grams light brown sugar
1 tablespoon lemon juice
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 tablespoon flour

Preparation:
Pie Crust: In a food processor, place the flour, salt, and sugar and process until combined. Add the butter and process until the mixture resembles coarse meal (about 15 seconds).
Pour 1/4 cup (60 ml) water in a slow, steady stream, through the feed tube until the dough just holds together when pinched. If necessary, add more water. Do not process more than 30 seconds.
Turn the dough onto your work surface and gather into a ball. Divide the dough in half, flattening each half into a disk, cover with plastic wrap, and refrigerate for about one hour before using.
After the dough has chilled sufficiently, remove one portion of the dough from the fridge and place it on a lightly floured surface. Roll the pastry into a 30cm circle. Fold the dough in half and gently transfer to a 9 inch (23 cm) pie pan. Brush off any excess flour and trim the edges of the pastry to fit the pie pan. Cover with plastic wrap and place in the refrigerator.

Then remove the second round of pastry and roll it into a 12 inch (30 cm) circle. Transfer to a parchment lined baking sheet, cover with plastic wrap, and place in the refrigerator.
Make the Apple Filling: In a large bowl combine the sliced apples with the sugars, lemon juice, ground cinnamon and salt. Let sit at room temperature for at least 30 minutes or up to three hours. 

Meanwhile, remove the top pastry crust from the refrigerator and let it sit at room temperature for about 10 minutes so it has time to soften. Pour the apples and their syrup into the chilled pie crust. Moisten the edges of the pie shell with a little water and then place the top crust over the apples. Tuck any excess pastry under the bottom crust and then crimp the edges using your fingers or a fork. Using a sharp knife, make five- 2-inch (5 cm) slits from the center of the pie out towards the edge of the pie to allow the steam to escape. Cover the pie with plastic wrap and place in the refrigerator to chill the pastry while you preheat the oven.
Preheat the oven to 425 degrees F (220 degrees C). Place the oven rack at the lowest level and place a baking stone or baking sheet on the rack before preheating the oven. Place a piece of aluminum foil on the stone (or pan) to catch any apple juices. Set the pie on the stone or pan and bake for about 45 to 55 minutes or until the juices start to bubble through the slits and the apples feel tender (not mushy) when a toothpick or sharp knife is inserted through one of the slits. Make sure to cover the edges of the pie with a foil ring to prevent over browning after about 30 minutes. Remove the pie from the oven and place on a wire rack to cool for about 3-4 hours before cutting. Serve warm or at room temperature with vanilla ice cream or softly whipped cream. Store at room temperature for 2 to 3 days

[3.52] Red Velvet Che?? Red Velvet Cake! Happy B-Day Mum!

Ho pensato che questo sarebbe stato un bel giorno di festa, è il compleanno di mia mamma e ho lavorato tanto per farle questa torta. Ma ovviamente la festa deve sempre essere rovinata e questa volta direi veramente alla grande. Non potrebbe esserci giorno più triste per me. Un giorno in cui i più tristi pensieri e i più dolci ricordi si accavallano nella mia testa e nel mio stomaco.
Ieri ho saputo che la mia ex compagna di scuola Claudia, colei che è stata la mia compagna di banco per 5 lunghi anni di superiori, colei che ha condiviso gioie e dolori dietro ai quei banchi di scuola, colei che è stata più di una sorella per me non c'è più. Non ha vinto la sua lotta, per quanto si sia difesa con le unghie e con i denti, per quanto abbia provato a fermare quella bestia feroce che ti mangia dentro con le sue piccola braccia sottili. Dopo 5 anni di devastazione non ce l'ha fatta.
E se anche il nostro rapporto non era piu quello di una volta, se anche ci eravamo perse di vista io continuo e continuerò a volerle un bene da sorella..quindi Ciao Claudia...see you later...

[3.52 SW] Red Velvet Cake alla mia maniera   (For English scroll down!)

Ingredienti per la torta:
250 gr farina 00
1 pizzico di sale
15 gr cacao
113 gr burro
300 gr zucchero
2 uova grandi
1 bustina di vanillina
240 ml di latticello (fatto con 240 ml di latte e gocce di limone)
3 cucchiai di colorante alimentare rosso
2 cucchiaini lievito
1 cucchiaino bicarbonato
2 cucchiaini aceto bianco
Per la copertura di cioccolato:
60 ml di acqua
15 gr zucchero
90 gr burro
150 gr cioccolato fondente
Per la farcia:
400 gr di filadelfia
1 bustina di vanillina
130 gr zucchero a velo
200 ml di panna da montare

2 stampi da 23 cm

Preparazione:
Riscaldare il forno a 180°.
Mescolare insieme la farina, il cacao, il lievito e il sale in una ciotola e mettere da parte.
in un'altra ciotola sbattere il burro, lo zucchero e la vaniglia fino a quando il composto è chiaro e morbido. Aggiungere le uova una alla volta e il colorante, poi mescolare.
Aggiungere il composto di farina e il latticello alternandoli, in 3 tempi partendo e finendo dalla farina.
in una tazzina unire il bicarbonato all'aceto e lasciar frizzare poi, lavorando molto velocemente, aggiungerlo al composto, mescolare e dividere il tutto nei 2 stampi (precedentemente foderati con carta forno sul fondo e imburrati ai lati).
Infornare per 25/30 minuti. Togliere dal forno e far raffreddare.
(Io ho fatto il pan di spagna il giorno prima dell'utilizzo e l'ho tenuto in frigo tutto il tempo. Poi il giorno dell'uso l'ho lasciato in freezer per 1 oretta per facilitare l'operazione di taglio e farcitura.)
Tagliare i 2 dischi a metà in modo da avere 4 dischi di pan di spagna.
Preparare la farcia sbattendo il filadelfia con la vaniglia e lo zucchero a velo. Aggiungere la panna da montare e mescolare con le fruste fino a quando il composto sarà ben solido.
(con questo composto bisognerebbe sia farcire la torta tra un disco e l'altro ma anche coprire completamente la torta; siccome per me risultava troppo dolce per i miei gusti ho modificato la ricetta facendo una copertura di cioccolato in modo da avere un bilanciamento amaro).
Se volete la vera Red Velvet Cake usate questa farcitura per farcire la torta sia tra i dischi che completamente fuori, altrimenti, se come me volete la variante al cioccolato, fate sciogliere in un pentolino  l'acqua con lo zucchero e il burro. Quando sarà tutto sciolto e inizierà a sfrigolare togliere dal fuoco e aggiungere il cioccolato. Mescolare fino a quando il cioccolato sarà sciolto e poi di tanto in tanto. Decorare con la farcia al cream cheese rimasta.
Mangiata il giorno dopo è ancora più buona!




Red Velvet Cake:


Ingredients for the cake:2 1/2 cups (250 grams) sifted cake flour
1/2 teaspoon salt
2 tablespoons (15 grams) regular or Dutch-processed cocoa powder
1/2 cup (113 grams) unsalted butter, at room temperature
1 1/2 cups (300 grams) granulated white sugar
2 large eggs
1 teaspoon pure vanilla extract
1 cup (240 ml) buttermilk
2 teaspoon baking powder
2 tablespoons liquid red food coloring
1 teaspoon white distilled vinegar
1 teaspoon baking soda
Cream Cheese Frosting:
2 - 8 ounce (500 grams) cream cheese, room temperature
1 teaspoon pure vanilla extract
130 grams confectioners' (icing or powdered) sugar, sifted
200 ml cups cold heavy whipping cream (double cream)
For the chocolate ganache:
60 ml water
15 gr sugar
90 gr butter
150 gr dark chocolate

Preparation:
Preheat oven to 350 degrees F (175 degrees C) and place rack in center of oven. Butter two - 9 inch (23 cm) round cake pans and line the bottoms of the pans with parchment paper. Set aside.

In a mixing bowl sift together the flour, baking powder, salt, and cocoa powder. Set aside.
In bowl of your electric mixer, or with a hand mixer, beat the butter until soft (about 1-2 minutes). Add the sugar and beat until light and fluffy (about 2-3 minutes). Add the eggs, one at a time, beating well after each addition. Scrape down the sides of the bowl. Add the vanilla extract and beat until combined.

In a measuring cup whisk the buttermilk with the red food coloring. With the mixer on low speed, alternately add the flour mixture and buttermilk to the butter mixture, in three additions, beginning and ending with the flour.
In a small cup combine the vinegar and baking soda. Allow the mixture to fizz and then quickly fold into the cake batter.
Working quickly, divide the batter evenly between the two prepared pans and smooth the tops with an offset spatula or the back of a spoon. Bake in the preheated oven for approximately 25 - 30 minutes, or until a toothpick inserted in the center of the cakes comes out clean. Cool the cakes in their pans on a wire rack for 10 minutes. Place a wire rack on top of the cake pan and invert, lifting off the pan. Once the cakes have completely cooled, wrap in plastic and place the cake layers in the refrigerator for at least an hour (or overnight). (This is done to make filling and frosting the cakes easier.)
Cream Cheese Frosting: In the bowl of your electric mixer, or with a hand mixer, beat the cream cheese until smooth. Add the vanilla and confectioners sugar and beat until smooth. Using the whisk attachment, gradually add the heavy cream and whip until the frosting is thick enough to spread. Add more sugar or cream as needed to get the right consistency.
Chocolate ganache: melt in a pan no the fire water, sugar and butter. When everything is melted keep off from fire and add chocolate. Mix until melted.
Assemble: With a serrated knife, cut each cake layer in half, horizontally. You will now have four cake layers. Place one of the cake layers, top of the cake facing down, onto your serving platter. Spread the cake layer with a layer of frosting. Place another layer of cake on top of the frosting and continue to frost and stack the cake layers. Frost the top and sides of the cake with chocolate ganache.
